Stuffed beef burgers are a fun, burgers grilled to standard switch tasty and easy to assemble. For two burgers, as in this case, just divide the total amount of meat into four equal patties. First two with stuffing, then place the remaining two cakes on top and fold together. That - ready to cook.

v  1 small chipotle pepper in adobo sauce, finely chopped
v  Dijon mustard 2
v  2 tablespoons honey
v  Adobo sauce 1 c
v  Sea salt
v  Freshly ground black pepper
v  Tenderloin 2/3
v  4 tablespoons olive oil, divided
v  1 large jalapeno, delivered, cored and thinly sliced
v  1/2 small onion, chopped
v  1/2 cup provolone cheese or mozzarella (or a mixture of both)
v  2 Large sandwich bread, lightly toasted


Combine chipotle chili, mustard, honey and adobo sauce in a small bowl and season with salt and pepper.

Divide the chopped tenderloin into 4 equal balls and place on a sheet of waxed paper. Make a second sheet of waxed paper on top and press breaded balls of 1/3 inch thick each.

Heat a skillet (or a cast iron skillet) over medium-high heat and brush with 2 tablespoons of olive oil.
Add the onion and jalapeno and season with salt and pepper. Grill, often stirring until softened and beginning to char, 3-4 minutes. Eliminate from heat and transfer the vegetables to a plate.

Remove the top sheet of sirloin burgers waxed paper. Divide the onion jalapeno mixture and pour over 2 patties. Divide the cheese over the vegetables.

Top each with 2 remaining patties and press to adhere. Fold the edges with your fingers to seal.
Reheat the skillet over medium-high heat and brush with 2 tablespoons of remaining olive oil. Grill burgers until lightly charred, turning 3-4 times, for a total of 7-8 minutes for medium (or until desired doneness).

Spreading chipotle sauce and mustard and spread on the upper halves of toasted rolls. Place a stuffed burger in each lower halves and place on top.

Cut each patty in half and serve.
